Guest Experience

The guest experience should be fluid, and easy to navigate throughout. The layout of the market/restaurant should be simple where guests can enter either through the restaurant or market and understand that the two are affiliated, between design and offerings.

 

The market/cafe will be a mix of traditional cafe/coffee shop & high-end deli counter service. When a guest enters through the market, they will be greeted by the retail/cafe team, where they can order a coffee from the cafe counter, order to-go rotisserie chicken from the deli counter, grab craft beer from the cold case, and a fresh baked baguette from the boulangerie and pastry selection.

 

When a guest enters through the restaurant entrance, they will be greeted by one of our servers or bartender, where they will be seated and served casual, full service style. Staff will be fully trained on our steps of service, with how we greet, water & table service, menu knowledge, and etc

  • Ideal Brooklyn location would be in a dense family/young professional demographic, near relevant trending restaurant concepts

  • Corner outlet on block for visibility and accessibility. 

  • Ideal location will be no more than a 5-7 minute walk from moderate to high volume subway stations.

  • Target Brooklyn neighborhoods: Prospect Heights, Crown Heights, Park Slope, Cobble Hill, Brooklyn Heights, Fort Greene, Greenpoint, Williamsburg

Offerings

The Restaurant will feature a full bar, with an extensive rotating tap list of craft beers and wine on tap. The limited, year-round menu would feature rotisserie chicken, crispy herb potatoes, Basque inspired sandwiches, charcuterie, fine cheeses & tapas.

The Market & Café will have a deli counter, barista counter, and retail offerings. Guests may order coffee, pastries and beverages from the barista counter. The deli counter will have an enclosed case filled with salads by the pound, and other hot foods by the pound - with the highlight being our To-Go Chicken.
